Sweet Pickled Banana Peppers


1/2 Lb Banana Peppers, sliced and seeded so that you have rings.
Pickling Juice
2 cups White Vinegar
2/3 cup White Sugar
1/2 tsp. Mustard Seed
1/2 tsp. Celery Seed
Sterile 2-Pint size jars and lids.
Boil the Juice to a rapid boil, fill the pint jars with the peppers ( I also added a couple garlic cloves in each jar). Pour the liquid in the jars filling it to 1/2 inch of the top of jar. Make sure there is no juice on edge of jar. Seal the lids on the jar and leave for 2 weeks!

Peas and New Potatoes


This is a recipe from Grandma Jenson. I LOVE it. It's one of my favorite things in the summer with fresh peas and potatoes.

Boil Whole Baby Potatoes, during the last few minutes, dump the fresh peas in boiling water and let cook. (it only takes a few minutes) Drain. (you can cut the potatoes if they are large, but I like the little ones left whole)

While potatoes are boiling make white sauce.

White Sauce
1/3 C Butter
1/4 C Flour
1/2 C Chicken Stock (or vegetable or whatever kind you have)
1 C Milk (or cream)
3/4 C Grated Cheese (any kind)
Salt and Pepper to taste.

Melt butter in saucepan, stir in flour to make a rue. Add Salt and Pepper to taste. Add chicken stock and Milk and bring to a boil. Let boil for a minute to thicken.

If desired, add 3/4 C Grated Cheese. Stir into rue until melted.

Pour white sauce over peas and potatoes and enjoy.
