Banana Chocolate Chip Muffins {w/brown sugar icing}
The muffins are delicious without the icing, but with the icing, they are AMAZING! In fact the icing alone is SOOO good, I made myself sick eating too much of it today!!
Banana Chocolate Chip Muffins {with Brown Sugar Icing}
I doubled this recipe
1 3/4 cups all-purpose flour
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
Brown Sugar Icing
Makes 2 1/2 cups
1/2 C {1 stick} butter, room temperature
8 oz Cream Cheese, room temperature
1 C packed brown sugar
With an electric mixer on medium speed, beat butter, cream cheese and brown sugar until combined and smooth. Use immediately or store in air tight container.

- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas
- 3/4 cup semisweet chocolate chips
